Lentil Curry with Coconut Rice

This curry recipe is perfect for cool fall evenings. The curry is prepared in the pressure cooker which makes it super quick on those busy weeknights. While the lentil curry is cooking, the rice can be made in the rice cooker and in about 25 minutes, you have a simple, healthy and delicious meal.

Why lentils?

I love to add lentils to my recipes because they add such a powerhouse of nutrients. Lentils are packed with protein, fiber, B vitamins (especially B6 and Folate), magnesium, and iron. In just one serving of cooked lentils, you will receive nearly 1/4 of your total recommended daily fiber intake, not to mention a healthy dose of iron as well. Most Americans do not reach the USDA daily recommendations for fiber which is set at 25mg for women and 38mg for men. Also, to increase iron absorption coming from non-animal sources, it is recommended to pair iron-rich foods with Vitamin C. I add broccoli, tomatoes and bell peppers to give a punch of Vitamin C to the meal.

If you are looking to increase your daily protein intake or are a vegetarian, lentils are an excellent protein source. Additionally, lentils are a complex carbohydrate and come in incredibly low on the glycemic index chart, allowing your body to slowly breakdown sugars and decrease insulin spikes. Overall, lentils are a very powerful food that can be used in many different ways!

Lentil Curry with Coconut Rice

Equipment

  • 1 Pressure Cooker
  • 1 Rice Cooker

Ingredients

Lentil Curry

  • 1 Tbsp olive oil
  • 1 bag frozen sliced onions and bell peppers
  • 1 small sweet potato peeled and diced
  • 1/2 cup broccoli florets
  • 1 14 oz. can diced tomatoes
  • 1 tsp garam masala
  • 1 tsp curry powder
  • 1 tsp kosher salt
  • 1 tsp chili powder
  • 1 cup red lentils

Coconut Rice

  • 2 scoops Rice
  • 1/2 cup Coconut Milk
  • Salt and Pepper to taste

Instructions

Lentil Curry

  • Saute all ingredients up to and including chili powder in the pressure cooker (on the saute setting) for about 5 minutes.
  • Rinse the lentils under cold water and add to pressure cooker.
  • Add 3 cups of water and stir all ingredients together.
  • Cook on high pressure for 8 minutes, perform quick release and stir.

Coconut Rice

  • In rice cooker, add 2 scoops of rice using the rice cooker measuring cup.
  • Add 1/2 cup of coconut milk and fill to the "2" line with water. Mix and set to cook.
  • Season with salt and pepper to taste. Serve lentil curry on a bed of rice.
