Fall Turkey Chili

This simple chili recipe is perfect for cool Fall evenings. This is great for Sunday evening, after a day spent hiking, or taking a day trip to a new town to explore. This chili is made with sweet potatoes to add a little more nutrients like fiber, Vitamin A, Vitamin C, iron, manganese, calcium and Vitamin B6. All of these vitamins and minerals are necessary to keep our bodies healthy and thriving. Ground turkey, beans and tomatoes round out this simple chili to give it a hearty nature perfect for that feeling of comfort.

I like to top the chili with home-made croutons to give a little crunch. These can be made in about 10 minutes from some day old baguette pieces or sourdough bread. Brush with olive oil, sprinkle with salt and pepper and bake at 400 degrees for about 10 minutes until golden brown.

Ingredients

Chili

  • 1 Tbsp Olive Oil
  • 1 Pound Ground Turkey
  • 1 Medium Onion diced
  • 1 bottle Beer (dark preferred) or beef broth as a nonalcoholic substitute
  • 2 Tbsp Chili Seasoning homemade or store-bought
  • 1 Can Fire Roasted Diced Tomatoes
  • 1 Can Black Beans
  • 1 Can Pinto Beans
  • 1 Cup Sweet Potatoes peeled and diced into 1 inch cubes
  • 1/2 Cup water
  • 2 Tbsp Tomato Paste
  • Salt and Pepper

Croutons

  • 1 loaf Crusty Bread (like a baguette or sourdough loaf)
  • 2 Tbsp Olive Oil
  • Salt and Pepper

Chili Seasoning

  • 1 Tbsp Chili Powder
  • 1/2 Tbsp Paprika
  • 1/2 tsp Cumin
  • 1 tsp Oregano
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • few Red pepper flakes

Instructions

Chili

  • Heat 1 Tbsp olive oil in dutch oven
  • Brown ground turkey and diced onion for about 3-4 minutes
  • Add beer to deglaze pot (be careful of steam and stand back from pot). Cook about 1 minute.
  • Add chili seasoning and stir to combine
  • Add diced tomatoes, black beans, pinto beans, sweet potatoes, tomato paste, salt and pepper, and water to the pot
  • Simmer for about 30 minutes
  • Stir chili and serve with croutons

Croutons

  • Pre-heat oven to 400 °F
  • Cube bread and toss in olive oil, salt and pepper
  • Spread bread cubes in a single layer on a baking sheet. Bake for about 10 minutes until cubes are lightly browned
