This recipe will be ready in 20 minutes for a quick and healthy dinner for a busy school night. Use pre-made frozen meatballs for a quick protein source, refrigerated ravioli and pre-made marinara sauce for a dinner that everyone will love. Ideally, I would have meatballs in the freezer from the previous Sunday or home-made marinara sauce (or what we call gravy) in the freezer, but store-bought works fine too! Just look for items that have the least preservatives, sugar and sodium. Save time on the prep, so you can enjoy a little more sit-down time with the family around the dinner table.
Weeknight Tortellini with Meatballs
Easy tortellini that is perfect for a busy school night. Tortellini, meatballs and tomato sauce make a quick and delicious meal.
Ingredients
- 1 pkg refrigerated tortellini family size
- 1 pkg frozen all beef meatballs
- 4-6 slices deli sliced pepperoni cut into 8 pieces each
- 1 cup marinara sauce
- 1/2 pint cherry tomatoes
Instructions
- Cook the meatballs in the air-fryer at 390 °F for 8-10 minutes (check that they are cooked through). Alternatively, bake meatballs in a single layer in the oven at 350 °F for 15-20 minutes.
- While the meatballs are cooking, cook the tortellini according to package instructions (usually 4-5 minutes).
- Add 1 Tbsp olive oil, pepperoni and tomatoes to a pan over medium heat. Cook about 3-5 minutes, stirring frequently.
- Add marinara sauce to the pan and simmer for about 2 minutes.
- Add tortellini and meatballs and stir to combine.
- Serve with grated parmesan cheese.
